The meatball, that little ball of kneaded meat, is a very homemade dish that solves many menus. I love it; when I am lucky to be able to eat at my mother's house, from whose hand master dishes come out, and she says, I don't know, what do you think if I make balls today? (She calls them half jokingly), I have to restrain myself so as not to raise a huge yes in a shout of joy. And sometimes I don't hold back, listen.
This mushroom stuffed meatballs recipe It is another way to prepare them, to vary a little and find a small surprise of mushroom, ham and pine nut inside. I swear it wasn't a sine qua non conditio that everyone would end up in on, pure coincidence that I have been aware of when writing this post.
Ingredients for six people
800 grams of minced meat mixed with veal and pork, half an onion, 80 grams of breadcrumbs, milk, one egg, two cloves of garlic, 60 grams of pine nuts, 300 grams of mushrooms, 80 grams of diced ham, breadcrumbs , salt and pepper.
For the sauce: 300 grs. of mushrooms, half chopped onion, oil, 200 ml of cream and salt.
Mushroom stuffed meatballs
We put the crumb of bread in a bowl and soak it in milk, letting it absorb a good part of it. We add an egg to the minced meat, the crumb soaked and drained, the minced garlic, salt and pepper, and mix everything until a homogeneous mass is left. We let it cool in the fridge for an hour.
Chop the onion and let it poach in a pan with a jet of oil. Meanwhile we clean the mushrooms and remove the root, chopping them into small pieces. Add the ham and pine nuts to the pan and when sauteed, put the chopped mushrooms and cook for half an hour over medium heat. Once cooked, we pass it to a bowl and let it cool.
We assemble the meatballs taking in the hand a portion of meat and making a small hole that we will fill with the mushroom mixture. We finish shaping the meatball taking care that nothing is seen from the filling. We pass them in breadcrumbs and fry.
You just have to make the sauce. We put the half chopped onion to be poached in a pan with oil. Add the mushrooms in slices, saute five minutes, add a glass of water and let them cook for 20 minutes. Add the cream and simmer for another five minutes.
