Chicken and fried egg strudel

Many times we succumb to the pleasure of eating some good fried eggs and sometimes we combine them with other ingredients. Today we have prepared this Chicken Strudel with Pedro Ximenez and fried egg. A delight

The ingredients (4 people) 12 slices of crustless bread, 1 chopped chicken breast, 4 eggs, 2 handfuls of arugula, 2 onions, 4 tablespoons brown sugar, 50 milliliters approx. Pedro Ximenez, 4 slices of cheddar cheese, black truffle, olive oil, black pepper and salt.

The preparation Flatten the slices of bread with the rolling pin and place them in a pan or iron with a few drops of oil (or butter), reserve.

In a pan with olive oil, fry the chopped onions with the sugar, when they start to transparent, add the chicken and season to taste. When the chicken has browned, water with the PX and let reduce.

Start assembling the dishes with a slice of bread, spread the chicken on it, put another slice of bread and on top a handful of arugula, season with salt and olive oil, another slice of bread and a slice of cheese.

Fry the eggs to taste, you can give it the square shape with a mold, and place them on the cheese slice. Grate the truffle on the strudel and end up watering with a thread of truffle or olive oil.
