The cherry season is here, one of the fruits that we like the most and with which we make a delicious dessert, the Cherry pie. This cake has a very intense and tasty taste with which you and those who participate in it will enjoy.
The ingredients 3/4 of a kilo of cherries, 100 grams of butter, 250 grams of flour, 1 tablespoon of brandy, a little cinnamon stick, 300 grams of sugar, 1 lemon, 80 grams of glass sugar, 2 eggs, 1 glass of Liquid cream and salt.
The preparation Wash and peel the lemon, reserving the peel. Wash and dry the cherries, remove the corner and bone, then mix the cherries with 220 grams of sugar, cinnamon and lemon peel in a pot, cook this compound for 20 minutes. Now prepare the dough with the flour next to the previously softened butter, brandy, a little salt and glass sugar. Strain the previous cooking and collect the resulting liquid (cherry syrup) in a bowl, let this juice cool and keep the cherries in the drainer.
Form a ball with the dough and wrap it with transparent film, then let this dough rest for 1 hour in the fridge. After this time take out the dough and stretch it until you get a sheet about 3 millimeters thick and line a mold with baking paper and introduce the dough.
Turn on the oven to warm it to 180º C, prick the dough with the help of a fork and place the cherries on it. Beat the eggs with the rest of the sugar, cream and a little salt. Pour the resulting cream over the cherries and you can now put the cake in the oven for 35 minutes.
Cut the cake into portions and accompany each one with a little cherry syrup.
