One of my favorite sweets are the bayonas. With the intention of preparing them for the snack I started a few days ago, but I got a big surprise to see that the angel's hair shone by his absence in my pantry. However, willing not to give up, I pulled forward and improvised some sweet potato puff pastries and sweet potato with orange blossom water that have already made a place in my recipe book.

How to make sweet potato puff pastry snacks and orange blossom water

We start with the sweet potato sweet and, for that, we peel it, wash and chop it in pieces of similar size. We introduce the sliced ​​sweet potato in a saucepan with boiling water and cook it until it is tender, about 35-40 minutes (depending on the size of the pieces). Drain the sweet potato and mash it together with the sugar, the zest of 1/2 lemon, the rum and the orange blossom water.

We spread the puff pastry sheet and review it with a roller, to match its shape. Cut into two strips of the same size and cover one of them with sweet potato sweet potato with orange blossom water, spreading it evenly. We place the other strip on top, brush it with beaten egg and sprinkle with sugar. We puncture the entire surface so that it does not swell in the oven.

Mark 14 portions with a cutter and transfer the puff pastry to a baking sheet covered with sulfurized paper. Bake at 210 ° C for 10 minutes, placing the tray in the center of the oven and using only soil heat. After this time, we also heat the upper part and cook for another five minutes or until it acquires a golden whole.

We left temper before cutting the portions that we have previously marked, otherwise it will break and crumble without remedy. We serve in cold or temperate, but without waiting much, because the puff pastry is at its best freshly baked.
